Christmas Cake 2012

My son wanted to have snow people on top of this years' cake so these are for him.....

Simple and sweet... made with fondant icing and some gel colourings for the "accessories"... v easy and looks good.... if it only lasts until Christmas it will be a miracle.

Morning Tea with the knitting girls....

the Knitting group came over for morning tea. So I decided to make it a special occasion with mini victoria sponges.... they turned out really well and I really had fun making them but even more fun with the knitting girls having great chats and tea....

I'll definitely make these again....

BAKE OFF !!!  From a Baking Competition Virgin......
I decided to enter the Bake Off at Tallaght Library in the Red Line Festival.... So the cake had to look like a book or have a book theme !..... so I got to thinking of Irish Writers and anyway long story short, here is the result.
So here it is, in situ at the competition....



Then the surprise....

So shocked, I won first prize in the cake category and first prize overall.... Prize is a cookery course in Ballyknocken House, so i am a happy baker today !

Helen's 50th Birthday Cake....

My good friend, gym buddy, and cake baker extraordinaire, Jenn, sent me a picture recently of her fabulous "rainbow cake". Fortunately, an opportunity to make this amazing cake presented itself in the form of my sister in laws 50th Birthday... I was ITCHING to try it..... It's a time consuming cake but SO worth the wow factor when you slice it .... take a look and see for yourself.  (The original idea is from an American College Student, whose blog "whisk-kid" has some seriously courageous and inventive cakes) Good on her I say... and also "why didn't I think of that " !!!

Christophers' first birthday cake

so I found a good lemon slab cake recipe and times and a halfed it as a knitting group friend loaned me a number 1 wiltons cake tin.  HUGE but fab and the lemon sponge recipe worked out really well because it was very firm and easy to decorate and then slice....
Definitely use it again for "shaped" cakes....


The firework is from Bulgaria, it lasted about 30 seconds and all the kids were thrilled with it....
